Swoon Memorial Magazine recently sat down with John Carrabba to talk a little about Piatto Ristorante. Here is what he had to say…
John what inspired you to begin a restaurant business in 2001?
It was a lifelong passion of mine and the timing seemed perfect, along with the location.
Why is it so important to you to make your customers feel like they are family?
It is important because I want them to feel like Piatto is their home away from home.
What would you say is the key to running such a successful restaurant business like yours?
Stay true to your roots and ALWAYS be there. That is essential to success.
What advice would you give to a new Houstonian?
Eat at as many local restaurants as you can. This city is filled with great restaurants and chefs. Savor the flavors of my hometown Houston.
What was your favorite food as a child?
Spaghetti and Meatballs.
Where is your favorite hang-out spot around Houston when you’re with your family? and why?
Home since I’m not there very often.
What would you say was your ideal job/work when you were a teenager?
Owning a restaurant was my childhood dream. I watched my dear Grandmothers and Mother cook and it always intrigued me.
What advice would you give to someone who had big dreams to own a successful business like you?
I would say keep it simple because it’s a very demanding business and the key is to be attentive and have the perfect staff. I am very blessed and fortunate as most of my employees have been with me since day one.
Do you have any suggestions on the menu for someone who has not eaten at Piatto before?
Yes, you have to try the signature Asparagus Speciali, Calamari Fritti, and if you haven’t had our lamb chops, you must give them a try! My preference is butterflied of course.
